Maple Taffy: A Very Sweet Soft Candy!
Maple taffy is a common confection made in regions producing maple syrup. It is a custom tradition in the production of maple products and usually served while making maple syrup. The process is normally called sugar on snow party, and children are always excited for this event. The confection looks like an oddly looking lollipop and tastes just like candy.
In making maple taffy, maple syrup is boiled up to 234⁰C. Temperature higher than this would create very hard consistency and temperature lower than this would result to plain maple sugar. In order to achieve the right temperature, it is advisable to have a candy thermometer. This thermometer accurately measures the temperature of boiling liquid. In terms of boiling the maple sap, the liquid should be in low fire. Other method can also be used like placing the bowl of maple liquid over boiling hot water. It is important that the boiling sap should not be stirred because sugar crystals can possibly form. Then, as the mixture reaches the right temperature, it should be poured over a bowl of clean snow. The coldness of the snow makes the mixture thick until to a soft candy consistency. When the mixture is pliable enough, then it is the right time to roll it over the wooden sticks. Sometimes, even the handles of spoons are used. The serving of maple taffy is usually accompanied with donuts, coffee and pickles. The coffee and pickles are intended to neutralize the sweetness of maple taffy, while the donuts are perfect partner for this soft candy.
Creation of organic maple sugar can also be done at home. Just boil down a locally purchased maple liquid and remember to use a candy thermometer in measuring its temperature.
